Glazed Ham with Cranberries and Rosemary

Ingredients

  • 500 mL (2 cups) cranberries
  • 125 mL (1/2 cup) sugar
  • 60 mL (1/4 cup) water
  • 60 mL (1/4 cup) port
  • 15 mL (1 tablespoon) cloves
  • 1 smoked ham (1.8 kg/4 lb)
  • 4 sprigs fresh rosemary
  • Whole peppercorns

Preparation

  1. Combine the cranberries, sugar and water in a saucepan and cook for 5 minutes. Drain the liquid from the cranberries and set the berries aside. Boil the liquid for 2 minutes. Add the port and cook for another 2 minutes.
  2. Preheat the oven to 200˚C (400˚F). Place the ham in a roasting pan. Insert the cloves in the ham. Brush the syrup on the ham. Garnish with rosemary and generously season with pepper. Roast in the oven for 2 hours. Baste regularly. Serve with the reserved cranberries, along with rice and a seasonal vegetable.
