Glazed Vegetables with Maple Syrup

Ingredients

  • 2 tablespoons of olive oil
  • 3 tablespoons of butter
  • 4 cups of pre-cooked vegetables of your choice (carrots, rutabaga, asparagus, parsnip, cauliflower, brocoli, etc.)
  • 1/4 cups of maple syrup
  • 1 to tablespoons of lemon juice
  • Salt and freshly ground pepper, to taste

Method

  1. Heat oil and melt butter in a large pan on medium heat. Sauté the vegetables gently for 4 to 5 minutes. Season generously.
  2. Add the maple syrup and lemon juice and bring to a boil. Let the juices reduce to form a glaze for the vegetables. Add more seasoning, if necessary.
