Marshmallow cake

Ingredients

  • 1 cup flour
  • 2 teaspoon baking powder
  • 1 pinch salt
  • 1/4 cup soft butter
  • 1 teaspoon vanilla
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 cup milk
  • Mini marshmallows

Icing

  • 1/2 cup butter
  • 1/4 cup milk
  • 1 cup brown sugar
  • 1 1/2 cups icing sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla

Preparation

  1. Mix together eggs, brown sugar and butter using an electric mixer. Once well mixed, add milk and vanilla.
  2. In a separate bowl, mix the dry ingredients together: flour, baking powder and salt. Add the mix to the first one and whip all together. Spread mixture into a greased 13x9 cake pan. Cook at 350F degrees for 20 to 25 minutes.
  3. As soon as you remove the cake from the oven, spread some mini marshmallows over the cake until it's all covered. Put back into the oven for 4 to 5 minutes.
  4. Icing

Icing

  1. Put butter, milk and brown sugar into a small saucepan. Simmer on low heat for about 3 minutes (don't bring to boil). Remove from heat and allow to cool down for about 30 minutes.
  2. With an electric mixer, at low speed, add all the other ingredients until the batter is smooth. It will be a bit liquid, but of a nice consistency. Spread on the cooled cake. Serve.
