Maple Baby Carrots with Crisp Bacon and Fresh Rosemary Click to enlarge

Ingredients

  • 125 g Compliments Maple Bacon, chopped
  • 10 mL Compliments Pure Olive Oil
  • 1 bag (340g) baby carrots
  • 125 mL sliced red onion
  • 2 sprigs fresh rosemary
  • 30 mL Compliments Pure Maple Syrup
  • 1 mL each salt and pepper

Preparation

  1. In a medium skillet over medium high heat sauté bacon until crispy. Remove bacon to paper lined plate; set aside. Discard excess fat.
  2. Wipe pan clean. Return pan to heat and reduce heat to medium. Add olive oil and sauté carrots with red onion until tender - about 15 minutes. Strip leaves of one rosemary sprig onto carrots and add maple syrup. Add salt and pepper and toss.
  3. Transfer to platter and drizzle over maple syrup pan juices. Sprinkle with crispy bacon and garnish with rosemary sprig.
