Apricot & Banana Muffins

Ingredients

  • 1 cup chopped dried apricots 250 mL
  • 1/2 cup apricot nectar or orange juice 125 mL
  • 1 cup whole wheat flour 250 mL
  • 1 cup all-purpose flour 250 mL
  • 2 tsp baking powder 10 mL
  • 3/4 tsp salt 4 mL
  • 1/2 tsp baking soda 2 mL
  • 1 egg, lightly beaten
  • 1/2 cup granulated sugar 125 mL
  • 1 cup mashed ripe bananas, mashed 250 mL
  • 3 tbsp margarine, melted 45 mL
  • 3/4 cup SO GOOD® Soy Original Fortified Beverage 175 mL

Cook commentary

Makes 12 muffins.
Dried fruit and whole wheat flour add excellent fibre to these tasty muffins. Great for breakfast or snack breaks.
