Ingredients

  • MAZOLA® Simplicity? Canola or Olive oil Cooking Spray
  • 1 1/2 cups all-purpose flour 375 mL
  • 1/2 cup granulated sugar 125 mL
  • 2 tsp baking powder 10 mL
  • 1/2 tsp salt 2 mL
  • 2 eggs
  • 1/2 cup CROWN® LILY WHITE® or Golden Corn Syrup 125 mL
  • 1/2 cup orange juice 125 mL
  • 1/4 cup MAZOLA® Corn or Canola Oil 50 mL
  • 1 tbsp grated orange rind 15 mL
  • 1 cup fresh or frozen cranberries, chopped 250 mL
  • 1/2 cup coarsely chopped walnuts or pecans (optional) 125 mL

Preparation

  1. Spray muffin pan with cooking spray; set aside. Mix together flour, sugar, baking powder and salt in medium bowl.
  2. Whisk together eggs, corn syrup, orange juice, oil and orange rind in large bowl. Stir in flour mixture just until combined. Stir in cranberries and walnuts. Spoon batter into muffin pan.
  3. Bake in 400°F (200°F) oven 18 to 22 minutes, until lightly browned and firm to the touch.

Cook commentary

Makes 12 muffins.
Tasty and moist, these muffins may also be made with fresh or frozen blueberries.
