Seafood Chowder

Ingredients

  • 2 L (8 cups) fish stock
  • 180 mL (¾ cup) pearl barley
  • 250 mL (1 cup) potatoes, diced
  • 250 mL (1 cup) red bell pepper, diced
  • 250 mL (1 cup) snow peas, diagonally sliced
  • 125 mL (½ cup) leeks, thinly sliced
  • 10 mL (2 tsp.) salted herbs
  • 750 g (1½ lb.) your choice of seafood (Northern shrimp, fresh mussels, fresh clams, fresh scallops size 20/30)
  • Fresh chives, chopped (garnish)
  • Pepper to taste

Preparation

  1. Bring fish stock to a boil in a saucepan. Add barley, vegetables and salted herbs. Let simmer over low heat for 30 minutes. Add seafood 10 minutes before end of cooking. Pepper to taste. When ready to serve, garnish with fresh chives
