Creamy Mushroom Soup

Ingredients

  • 3 cups (750 ml) thinly sliced mushrooms
  • 1/4 cup (50 ml) chopped onion
  • 2 cups (500 ml) chicken broth
  • 1/4 cup (50 ml) flour
  • 1/4 cup (50 ml) Sealtest butter
  • 1 tsp (2 ml) salt
  • 3 cups (750 ml) milk

Preparation

  1. In medium saucepan, combine mushrooms, onion and chicken broth. Bring to a boil. Reduce heat and simmer, covered, 15 minutes.
  2. In large saucepan, melt butter. Add flour and salt, and gradually add milk. Cook over medium heat, stirring constantly, until soup has boiled and thickened slightly. Stir in mushroom mixture. Serve hot.
