Citrus au Gratin

Ingredients

  • 4 egg yolks
  • 250 ml (1 cup) maple syrup
  • 60 ml (1/4 cup) white wine or Sortilège (maple syrup liquor)
  • 80 ml (1/3 cup) whipping cream
  • 2 oranges, cut into sections
  • 1 pink grapefruit, cut into sections
  • 2 Blood oranges, cut into sections
  • 2 limes, cut into sections

Directions

  1. Preheat oven to broil. Combine egg yolks, maple syrup and white wine in a bowl. Place the bowl in the upper part of the bain-marie, heat over low heat and beat mixture until a smooth, rich and frothy texture is obtained. Set aside.
  2. Whip cream and add to egg yolk mixture. Set aside. Fan out citrus sections into four ramequins. Divide frothy texture over all four fruit filled ramequins.
  3. Broil in the oven until frothy mixture turns golden.

Chef's Tip: Avoid boiling the water in the bain-marie to keep egg yolks from congealing.
