Cream of Carrot and Pear

Ingredients

  • 30 ml (2 tbsp) butter
  • 3 green onions, minced
  • 1 L (4 cups) chicken broth
  • 500 ml (2 cups) carrots, sliced into medallions
  • 2 pears, very ripe, pealed, seeded and sliced
  • 60 ml (1/4 cup) white rice, uncooked
  • 60 ml (1/4 cup) cream 15%
  • 2 ml (1/2 tsp) ground nutmeg
  • To taste salt and pepper
  • For garnish cream 15% (optional)

Directions

  1. In a large saucepan, melt butter over medium-high heat and sauté green onions for 1 minute. Add chicken broth, carrots, pears and rice. Bring to boil, cover, then simmer over medium-low heat for 20 minutes.
  2. Pour mixture into blender and purée, incorporate cream and season with nutmeg, add salt and pepper to taste. Serve immediately, garnish each bowl with a thin thread of cream, if desired.
