ingredient
- 5 oz (150 g) Canadian Empereur cheese*, in thin slices
- 4 large ripe tomatoes, sliced (do not throw away juice)
- 2 pinches coarse sea salt
- 1 large avocado
- 12 fresh basil or fresh tarragon leaves or a few leaves of flat parsley
- 4 tbsp (60 mL) virgin olive oil
- Freshly ground black pepper
Preparation
- Place Canadian Empereur cheese slices and tomato slices on two plates. Sprinkle tomatoes with a pinch of coarse sea salt; this will extract juice from tomatoes. Place in refrigerator for about 30 minutes. Shortly before serving, cut avocado into slices or large dice.
- To serve, arrange avocado on plates and sprinkle with basil, tarragon or flat parsley. Drizzle with olive oil and season with pepper. Serve at room temperature with crusty bread.
