Greek Salad Lemon Vinaigrette

Ingredients:SALAD

  • 4 large tomatoes, cut in thin wedges
  • 1 English cucumber, coarsely chopped
  • 1 cup (250 mL) pitted black olives
  • 1 cup (250 mL) Tre Stelle® Crumbled Feta Cheese

Vinaigrette

  • 1/2 cup (125 mL) Bertolli® Olive Oil (Extra Virgin recommended)
  • 3 Tbsp (40 mL) lemon juice
  • 1 tsp (5 mL) each dried oregano, thyme and salt
  • 1/4 tsp (1 mL) pepper

Salad

  1. Whisk together all vinaigrette ingredients. Combine all salad ingredients. Toss together. Serve immediately or refrigerate until serving time. Serve on salad greens, if desired.
