Jambalaya Soup

Ingredients

  • 1 Tbsp vegetable oil 15 mL
  • 1 onion, chopped 1
  • 2 cloves garlic, minced
  • 2 celery stalks, sliced
  • 1 green pepper, cored and chopped
  • 2 cups sliced smoked sausages, (mild or hot) 500 mL
  • 1 cup UNCLE BEN'S® CONVERTED® Rice 250 mL
  • 1 can (28 oz / 798 mL) diced tomatoes
  • 4 cups chicken broth (or water) 1 L
  • ½ tsp cayenne pepper, or to taste 2 mL
  • Chopped parsley (optional)

Preparation

  1. Heat oil in a large saucepan. Add onion and garlic; sauté 2 to 3 minutes. Add celery, pepper, sausages and rice. Cook over medium heat 5 minutes.
  2. Stir in tomatoes, broth and cayenne pepper. Bring to a boil, reduce heat, cover and simmer 20 minutes. Season to taste. If desired, sprinkle with parsley.

Tip: Jambalaya is a versatile dish that combines rice with a variety of ingredients including tomatoes, onion, green peppers and almost any kind of meat, poultry or shellfish. If desired, add some chicken, ham and/or shrimp to make this soup even heartier.
