Cajun Salmon Fillets

Ingredients

  • 1 tsp. (5 mL) Cajun spice mix
  • ¼ cup (60 mL) Irresistibles extra virgin olive oil*
  • Peel of ½ lime, finely grated
  • Juice of 1 lime
  • 4 salmon fillets, 5 oz. (150-g) each
  • ¼ tsp. (1 mL) Irresistibles extra virgin olive oil*
  • Irresistibles sea salt* to taste

preparation

  1. In a bowl, blend spice mix with olive oil, lime peel and juice. Brush salmon fillets with marinade and refrigerate for at least 30 minutes. Salt fillets.
  2. Heat a bit of olive oil in a non-stick pan over medium-high heat. Put in fillets skin-side down, lower heat to medium and cook 5 - 10 minutes. Serve with green and wax beans.

Suggestion Marinating Time: 30 minutes
Salmon fillets handle more easily and keep their shape better if cooked with the skin on. When the fish is done, just slide a spatula between flesh and skin to separate them. Salmon is done when its flesh is opaque and flakes at the touch of a fork.
