Rougemont Coffee with Maple Cream

Ingredient

  • 2 l (8 cups) black coffee, very hot
  • 240 ml (1 cup) apple alcohol, such as Calijo de Rougemont or Calvados
  • 1 lemon
  • 60 g (4 tbsp) fine maple sugar
  • 300 ml (1¼ cup) whipping cream 35% m.f.
  • 60 ml (4 tbsp) maple syrup

Preparation

  1. Rub edges of 8 flambé coffee glasses with lemon and dip in maple sugar. Pour 30 ml of Calijo de Rougemont in each glass and fill to ¾ with strong, hot coffee.
  2. Beat cream with maple syrup until properly whipped and place a dollop of cream in each glass. Sprinkle with remaining maple sugar and serve immediately.
