Cranberry and Coconut Balls

ingredient

  • 750 mL (3 cups) miniature marshmallows
  • 60 mL (¼ cup) butter
  • 5 mL (1 tsp.) vanilla
  • 750 mL (3 cups) puffed rice cereal
  • 175 mL (¾ cup) dried cranberries
  • 500 mL (2 cups) coconut flakes
  • Green pistachios, thinly sliced (garnish

Preparation

  1. Combine marshmallows and butter in a saucepan over medium-low heat for 3 to 5 minutes, stirring constantly. Remove saucepan from heat.
  2. Add vanilla and mix well. Add half of cereal and mix again. Add remaining cereal, cranberries and half of coconut flakes and mix until all ingredients are thoroughly coated.
  3. Let cool slightly. With buttered hands, shape mixture into small balls about 5 mL (1 tsp.) in size. Spread remaining coconut flakes and pistachios in a shallow dish. Roll balls in mixture and refrigerate.
