Balsamic Yogurt Cucumber Salad

Ingredient

  • 1 cup plain yogurt
  • 3 to 4 cloves garlic, finely minced
  • 2 tablespoons Crisco® Pure Canola Oil
  • 1 tablespoon white balsamic vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cucumbers, peeled, seeded, and cut into 1/2-inch pieces
  • 1/4 cup torn fresh mint

Preparation

  1. COMBINE dressing ingredients; whisk to combine. Add cucumbers; toss to coat. REFRIGERATE 4 to 6 hours to develop flavors. Garnish with mint; serve.

TIP White wine vinegar may be substituted for white balsamic vinegar, if necessary.
