Banana Orange Muffins

Ingrédient

  • 1 1/3 cup (330 mL) whole-wheat flour *
  • 1/3 cup (80 mL) brown sugar*
  • 1 Tbsp. (15 mL) baking powder*
  • 1/4 tsp. (1 mL) salt
  • 1/4 cup (60 mL) melted butter*
  • 1 cup (250 mL) sliced well-ripened banana
  • 1 cup (250 mL) milk
  • 1 egg*
  • 1 orange, zest of orange

Preparation

  1. In a bowl, mix flour, brown sugar, baking powder and salt. In another bowl, mix the rest of the ingredients. Make a well in the centre of the dry ingredients and pour in the liquid ingredients all at once.
  2. Lightly mix with a spatula, just enough to moisten the dry ingredients. Fill non-stick muffin tins to 2/3. Preheat oven to to 375°F (190°C). Bake 25-30 minutes.

Cook commentary

Servings: 12 muffins
Suggestion: Do not mix too much or the batter will form tunnels when baked.
