Ham-and-Cheese-Stuffed Turkey Cutlets with Gremolata

ingredient

  • 4 ham-and-cheese-stuffed turkey cutlets
  • Pepper to taste
  • 15 mL (1 tablespoon) olive oil
  • 125 mL (1/2 cup) finely chopped fresh parsley
  • Zest of one orange
  • Zest of one lemon
  • 1 clove garlic, finely chopped
  • 1 envelope commercial demi-glace sauce
  • 15 mL (1 tablespoon) orange marmalade

Preparation

  1. Preheat oven to 160°C (325°F).
  2. Generously season turkey cutlets on both sides with pepper.
  3. In an oven-proof skillet, heat oil over medium-high heat. Sear cutlets for 1 minute on each side. Transfer skillet to oven and bake cutlets for 20 to 25 minutes, or until meat is no longer pink inside.
  4. In the meantime, combine parsley, lemon and orange zest, and garlic in a bowl. Reserve. In a small saucepan, prepare demi-glace sauce according to package instructions. Add orange marmalade and stir well.
  5. Serve cutlets on orange demi-glace sauce and garnish with gremolata. Accompany with linguini and rapini.
